Machine language program - 530 bytes.
This machine language program was published in a 1984-5 issue of "The Pocket Computer Newsletter". It just takes the keyboard input (the same editing features that are available in the basic interpreter), displays the text, keeps everything as an ASCII text file. You can then CSAVE it to your recorder.

You can CSAVE and CLOAD the text once you've run the program.
You <BREAK> out of it as you would with any program.
